Baked Kale Chips

I love snacking!! Well, who doesn’t? Without fail I need a cup of chai at 4pm and some snacks to go with it especially something crunchy and spicy. I usually would end up eating about 8-10 kettle potato chips but of late I have been sticking to Snapea Crisp thinking it is slightly better than potato chips. However, I am not completely convinced they are healthy and so I decided to google recipes for Kale chips. Kale is nutrient dense and a very versatile food. Simply steam them, add it to your stir-fry or make a kale pesto the options are endless 🙂 There are plenty of health benefits one can get by including kale in one’s diet which you can find out here . For now, here is my recipe for kale chips Ingredients: 1 bunch of Kale 2 tsp olive oil (as needed) 1 tsp of Tajin seasoning Method: 1. Wash kale and pat them dry completely. There should be no water on kale leaves. Next, remove the hard and fibrous stem. Tear the Kale leaves in 3″ pieces 2. In a mixing bowl, add torn kale leaves , olive oil and tajin seasoning. Rub the seasoning on to each leaf. Lay the leaves on lined cookie sheet in a single layer 3. Preheat oven to 350 degree F. Bake the chips for 12-15 mins until they are done. Keep a watch while baking so they don’t get burnt! 4. Once done, allow the chips to cool down for a few mins before you take them off the cookie sheet. Enjoy!! Variations: Try to season them with plain salt, pepper or grated Parmesan...

Day 31: 30 things..

I can’t believe, I have been succesful at keeping this challenge. It was a bit difficult, but I manged to do it 🙂 Me and my husband often have this conversation, that we need to slow down in life a bit and enjoy before we get old.  Then, our conversation took a turn to things we would like to do before turning old. For my husband, turning old means 30! He will turn 30 next year, but I luckily have 2.5 years. So, I came with a list of 30 things I would like to accomplish, before I turn 30. Run a 10k/ half marathon Plant a garden (Summer 2014) Learn how to Photoshop Learn Spanish (Spring 2014- ongoing) Paint good, large oil paintings that can be mounted in the house (Dec 2014- Jan 2015) Learn to paint with watercolor and finish a outdoor painting (Summer of 2015) Complete a walk for Susan Komen breast cancer awareness Be an active volunteer in an organization I am passionate about Launch a startup Become  a Mom Hike half dome, Yosemite See Ka show in Vegas (Summer 2014, enjoyed two shows Ka and Mystere) Serve a village in India Pay for a child’s education in India (2012 and 2013- Veeraytan) Take piano lessons ( Summer 2014 began online lessons) Get a job as an RD ( July 2015 as soon as I received my work permit) Read books Visit veerayatan Visit Rajasthan Go on a road trip ( We took several trips in and outside of US including short road trips to 17 mile Drive, Big Sur, LA, San Diego, Pismo, SLO etc) Lean embroidery and make cushion  cover ( Made a anchor stitch frame to be hung in my house) Own tiffany and co necklace ( Bought myself a gold pearl pendant and a gold chain during my India trip early of 2017) Set a good skincare routine Visit Newyork Master the art of meditation Create a photoframe with good pics and family pics/ create photocollage for display on wall (Got a frame with my and hubby’s good pics in 2017, need to include family pics soon) Get a professional photoshoot of me and sagar ( Got this done in 2014-2015 at the Alum Rock State Park but did not have a good experience) Visit cancun/ Hawaii!  (December 2013 visited Hawaii) Perfect “daal baati” – a popular Rajasthani dish! Join a swimming club to go for regular swims ( Joined Milpitas sports club and went swimming couple times but did not enjoy the darkening of the skin and hair texture due to chlorine water and decided to enjoy swimming while on vacation only as opposed to regular exercise form until I...

Day 20: Getting real…

Today’s post “Get real. Share something you’re struggling with right now.” Well, its not right now, but something that I always struggle with is my weight! I have teased of being fat eversince I was a child. It is deep instilled in me that I am fat. It was not until 2009 when this thing hit me, although I always was concious about my weight and appearance! In 2009, I was trying to lose weight by following a diet and exercise routine, when even after 3 months I wasn’t successful, I got my thryoid check and boom! I was diagnosed with hypothyoridism and hence I was not losing weight. I don’t how many years before 2009 have I been suffering for, but that doesn’t matter. As I began my medication, my thyroid began to stabilize but my mother in law wanted me to try homeopathic medication. I do not belive in homeopathy but due to a lot of insistence, I had to stop my allopathic medication and go on homeopahty medicines. Instead of an improvement, my thyroid levels went up by  three times! What happened to my weight? of course, it increased! I was 2-3 months away from my wedding, I didn’t want to look bloated and so I went back to my allopathic medications. What followed was, adjusting my thryoid medicines to overcome the deficiency. The sad part is, although I haven’t gained any more weight. I have been struggling with reaching a stable dose of medication to reach normal thyroid levels…. So, I can say hypothyroidism and weight are the 2 things I am struggling with right now….hopeful that I will overcome them soon...

Day 6: What do you do?

Day6: Blog post challenge: If you couldn’t answer with your job, how would you answer the question, ‘what do you do’? What do I do ? The first question we ask strangers. On the surface, it seems like an ordinary question, but asking myself this question and answering it indirectly feels a little weird! Unfortunately, I make people count their calories and watch what they are eating!!! Not true. I help people eat healthy. I convince them that eating healthy is not as expensive or tough as they think. I help them stay away from deadly diseases such as obesity, diabetes,heart disease and many more. I inspire.motivate.heal through food. I help people establish a peaceful relationship with food. Currently, I am doing all this for free throguh social media. But wait, those are not the only things I do….I cook, clean, dust.  I paint whenever I find time. I blog.
